Black Forest Cheesecake-Happy birthday to me!

I celebrated my birthday this weekend. By 8 a.m. that day, everyone was at work or school and I had the house to myself. YAAAY! I spent the morning in my craft room wearing my pajamas and listening to the carpenters. Yes, that’s right. I am a complete nerd.  It was heaven! 

That evening when everyone was home we brought home takeout food and had this Black forest cheesecake. —My present to myself!

 Every year on my birthday I make my own cake. It’s usually cheesecake (my favorite) and it’s usually a new recipe.  My mom used to make whatever cake we wanted on our birthdays and when I was a teenager black forest cake became my favorite. I would request it every year.

 I just love chocolate with fruit and cherries are my very favorite.  My mom passed away a few years ago. I have been missing her so much lately and this year I decided to make myself a Black Forest Cheesecake in celebration of my mom and birthdays past. She would have loved this recipe

There are all kinds of cheesecake from refrigerated to baked, smooth and creamy to almost cake like. I prefer the latter! To me, the texture matters just as much is the taste and I like my cheesecake dense and cake like. Sometimes I hesitate to order cheesecake in a restaurant because if it comes back to smooth and creamy I’m disappointed. So when you make a cheesecake recipe from me you can pretty much count on it being that wonderful, rich, decadent, texture

If you’ve never made cheesecake please don’t be intimidated. It’s easy! I promise! Sometimes when I see a recipe and it uses a piece of equipment or an ingredient I’m not used to, I scrap the whole idea because I don’t want it to be difficult, but I promise you- a springform pan is what makes cheesecake easy, not the other way around. Trust me on this one.

Black Forest Cheesecake

1 10 ounce package of Oreo Thins-crushed (reserve a few to decorate top)
1 tablespoon sugar
1/4 cup butter, melted
10 oz of Ghiradelli semi-sweet chocolate
4 (8 ounce) packages of cream cheese, room temperature
1 1/3 cups of sugar
1/4 cup of unsweetened cocoa powder
4 large eggs
1 cup heavy whipping cream
9 ounces semi-sweet chocolate chips
Cherry pie filling
Whipped cream or your favorite whipped topping. (I used Cool Whip)
Chocolate curls

For crust:
Preheat oven to 350°
Combine cookie crumbs, sugar and melted butter in mixer and mix until combined. Press mixture evenly on to bottom of 9 inch spring form pan. Bake for five minutes. Let cool while preparing filling.
For filling:
Using glass bowl, melt chocolate in microwave. Start with one minute, stir,  and heat at 30 second increments until you can melt remaining chocolate pieces by stirring. Let chocolate cool until luke warm, but still pourable. Blend cream cheese, sugar, and cocoa powder in mixer until smooth. Blend in eggs one at a time. Add lukewarm chocolate. Pour filling over crust; bake for 1 hour.  Turn of oven and leave cake in oven for one additional hour.
For ganache:
Heat cream in microwave using a glass (or microwave safe) bowl until it starts to bubble. Add chocolate chip slowly while stirring. Mix until chocolate is melted. Let mixture cool slightly and then pour it over the top of your cheesecake, letting a little spill over the edges.
Top with cherry pie filling. (I used one small can, but I always buy an extra one for those who want more. – That would be me!)  Add several dollops of whipped cream to top. Place an Oreo cookie in each dollop vertically. Make chocolate curls or chocolate pieces to decorate center of cheesecake.

PS: As much as I love cherries and chocolate together, would you believe I’ve never had a good quality cherry chocolate? All I have had are the cheap “Walmart“ cherry chocolates. I do like them, but I I don’t love them and I would really like to try a better version.  If you know of a place I can get some please let me know. We will be friends forever!

January Visiting Teaching-The JOY of trying again

So, there is a new visiting teaching model and I'm not sure what that will bring from month to month, but I'm thinking I will probably (at least occasionally) be making and sharing a handout. 

This month I used a quote from the First Presidency message. I love the motivation January brings for change and improvement.  What a joy it is to have the ability and the desire to grow and become the people we want to be.

I have been just itching to try out some of the products I have purchased from Fun Stampers Journey (FSJ).  I had so much fun making this little handout and I think it turned out pretty cute. I'm sure I'll be using this Double Pocket Die a lot!

Let’s Craft together!!!

I have really fallen in love with stamping and making cards lately! I am going to be doing some tutorials on YouTube and some live Facebook videos. I hope you’ll join me. I think it will be fun to do some projects together.

Father's Day book review: The Good That Men Can Do by D Todd Christofferson

Father's Day is tomorrow. Are you ready to show the men in your life how much you love them?  

Men kind of get a bad rap.  The fight for equality has kind of tipped the scales in the other direction in some ways.  Instead of treating all races, genders and cultures equally It seems that we just trade one lauded group for another. Seems like people go out of their way to praise women and the wonderful things that they contribute to society, I like that. I'm one of them, but There are also wonderful, hard-working, faithful, dedicated men in this world who also deserve our respect. Especially the good husbands and fathers out there.
In his book, The Good That Men Can Do by D Todd Christofferson shares his thoughts about men and the powerful way they can and do influence and bless our lives. This book is a wonderful tribute to good men all over the world.
This book touched me deeply. It reminded me of the Great blessing it is to have a wonderful father, husband, son's and other good men in my life.

The Best Cheesecake!!! You Need These Recipes!!!

I'm just gonna put this out there...

I don't know why, but I didn't taste cream cheese till I was in high school. My Young Women's advisor (church youth group leader) was making hors d'oeuvres for a party she was having at her house that night. She was simply spreading cream cheese on white bread, cutting the crust off and cutting them into squares and triangles. She finished them off with a garnish of some type. Some had olives, some had cherry tomatoes etc. She gave me a taste and I wanted to eat the whole dang tray! What the heck? What kind of sheltered life had I lived up to that point in my life?

Since then I have been in love with cream cheese, but the best we to have cream cheese is in the form of cheesecake! I have passed my love of cheesecake onto my family and most of the family parties and birthdays we have feature the cheesecake of their choice.

Not just any old cheesecake is acceptable. The taste has to be good. That's obvious, but the texture is key! No slippery, pudding like texture for me.  That is just not right.  The texture needs to be more cakelike.  If you were to break a piece off it would break unevenly, and leave a bumpy edge. Yep, texture is everything.
Saturday we celebrated 3 family birthdays. My husband's, daughter's and son's.  Everyone wanted cheesecake. Hayley wanted Chocolate with an Oreo crust and Dallin wanted a basic cheesecake with strawberry topping.  I have made a lot of cheesecakes!  I tweak the recipes until they are just how I like them, but these ones were extra good!
 Basic Cheesecake

1 1/2 cups graham cracker crumbs
1/3 cup butter
1/4 C sugar
4 (8 oz) pkgs cream cheese (at room temperature)
1 C sugar
4 eggs
2 t vanilla

Preheat oven to 325* F
Combine graham cracker crumbs, melted butter and 1/4 C Sugar.  Press mixture into bottom of 9 inch springform pan.  Bake for 10 minutes.
Beat softened cream cheese with 1 Cup Sugar till well blended.  Add eggs one at a time.  Add Vanilla.
Pour mixture into pan. Bake for 60 minutes.
Turn off oven. Leave Cheesecake in oven for 30 minutes and then refrigerate.
When cheesecake is completely cool, drop dollops of Coolwhip evenly around Cheesecake. Slice 3 strawberries in half and place them on each dollop.

Strawberry topping.
Add sliced strawberries to a jar of  Smuckers Strawberry Topping.  I melted the topping and then added the strawberries.  Easy and yummy!

Chocolate Cheesecake with Oreo Cookie Crust

1-1/2 C (about 20 cookies) Oreo crumbs
2 T butter melted
3 8oz pkgs cream cheese - softened
1 C Sugar
2 tsp. vanilla
1 12 oz pkg Ghirardelli Semi Sweet Chocolate Chips
3 eggs
1 jar Smucker's Hot Fudge

Preheat oven to 325*F
Mix Oreo crumbs with butter.  Stir until well mixed. Press into bottom of 9" springform pan. Bake 10 min., Set aside.

Beat cream cheese and sugar together to smooth and well mixed. 

Melt chocolate chips in microwave.1 minute>stir 30 seconds>stir. continue at 30 second intervals till completely melted. then add to cream cheese mixture.

Add eggs one at a time. Add vanilla.

Spoon batter onto crust and bake for 60 minutes. Turn off oven and let cheesecake sit in oven for 30 minutes then refrigerate. When completely cooled, melt hot fudge in microwave according to directions on bottle.  Pour over top of cheesecake allowing some to drip down the sides.

To garnish-add 6 dollops of coolwhip to top of cake by sliding off spoon with finger.  Place a cookie into each dollop. (you can sprinkle each dollop with chocolate chips, cookie crumbs, etc)

Good Morning Summer

Can you believe it's June? IT'S SUMMER!!! OK, Summer's not officially here till the 21st according to the calendar, but the calendar is always behind on these things. Am I right? What fun things do you have planned this summer?

I love that every season has its own pace. The changing colors of autumn inspire personal changes as well. New goals, a more organized and regimented schedule and commitment to better ourselves seem to come naturally this time of year.

I absolutely love the first real snowfall of the winter! As the snowflakes meander to the earth they bring with them a peace and a promise of Christmas celebrations, beatiful pastel snowscapes and evenings at home by the fireplace. There is definitely another side of winter though. and it's not awesome! Once January starts the charm wears off. Everything looks dead and gray, The days are short, ITS COLD and I am over it!

Enter Spring. Spring is hope, new beginnings, LIFE! Color trickles back little by little and before you know it everything is in bloom! It even smells great! Spring even seems to grow people. The neighbors you haven't seen all winter are working their yards and exercising their bodies and it's just wonderful!

And now it's summer! Summer moves at a much more relaxed pace. (At least for me.) No more concerns about carpools, homework assignments, or stringent schedules. It's time to relax and play! Swimming pools, barbecues and vacations are just a few of the things that I love about summer! Kade's last day of school is tomorrow. I get the same "last day of school" feeling today as I did when I was a kid! I LOVE IT!!!

I am so not cool! Sometimes I hear things made fun of and think to myself, "I actually like that". And sometimes the things that are SO trendy just don't make it into my heart.
I like music.-all music. (OK, almost all music.) I don't care if it's totally uncool. If a Justin Bieber song I like comes on the radio, I will turn that baby up full blast and sing at the top of my lungs! If it's Opera-same!
And clothes??? If it's not comfortable, forget it! Comfort first is my style.
ROSE GOLD. I just don't get it. What is the big deal? Seems like everyone is going CRAZY over it and I'm over here thinking, "What? Why?"
Don't worry though. I'm not judging anyone who wears it. And it's just not my thing. But then again I am not the fashion police. Not even close!
So go ahead and wear your rose gold and your fancy clothes and listen to cool music. I'll just stay at home in my pajamas and listen to the carpenters.πŸ˜‚πŸ˜‚πŸ˜‚

A Stitch In Time Saves MINE!!!

Kade is a total stud!!!  πŸ’” He was super nervous about getting a numbing shot. Ted (another stud) was hoping to close the cut with just Dermabond, but it wouldn't line up evenly so he had to do one stitch in the middle first. ➰ He didn't have any numbing medicine at homeπŸ’‰ so we held ice on the cut for about a minute and a half. Ted did the stitch and Kade said he didn't even feel it. πŸ‘πŸ»The sides closed up beautifully with dermabond and Kade is good to go!  πŸ‘ŒπŸ»

What's more scary than getting a numbing shot? πŸ’‰πŸ’‰πŸ’‰Getting a stitch without the numbing shot.😱

Music Review: Mormon Tabernacle Choir and friends

Deseret Book sent me a copy of this album and asked me to share my thoughts with you, my readers.  All opinions are my own.

MOTAB and Friends---What a fun album! I am a lover of many kinds of music from opera to country and even some hip hop. How they managed to make so many genres blend together so cohesively I'll never know, but definitely works 

I've always been a James Taylor fan and loved this rendition of The Lonesome Road. Homeward Bound was probably my favorite. What a beautiful voice Brian Tercel has. And what a blast to hear sweet Angela Lansberry share her first impressions of the song Beauty and the Beast and how she came to develop her character for Mrs. Potts.

The Mormon Tabernacle Choir has collaborated with some of the most legendary vocalists and performers over the years.     The 360 members of the Mormon Tabernacle Choir represent men and women from many different backgrounds and professions and range in age from 25 to 60.     Music Review-City of Enoch: Sweet Redeemer

    Deseret Book sent me a copy of this album and asked me to share my thoughts with you, my readers.  All opinions are my own.

    I was at the gym yesterday (don't faint) and decided to give this new album a try. As soon as the music began streaming through my headphones I started smiling. 

    Who did these guys remind me of? Edwin McCain? Nickle Creek, Lady Antebellum? Maybe, but they definitely have a sound all their own and I LOVE IT! 

    This CD is going to be my new favorite to sing along to in the car! There's Joy and He Hears Me we're my instant favorites. 

    This album has a quality that makes you just want to sit back and enjoy listening and would make the perfect Mother's Day gift!

    Book Review: Once There Was a Mom

    Raising six kids has not been an easy endeavor. I have shed many tears, uttered many prayers and stayed up many nights worrying on behalf of the little ones I love so much.  When I look back on their young years I hardly remember the messy rooms, less than stellar grades, cavities, a kitten almost being cooked in the microwave, a call from the local police station (yep, that happened) broken… EVERYTHING and fears that I would fail them as a mother. Instead I see bedtime stories, heartfelt talks, family outings, much improved and impressive grades and dental hygiene, and laughing---lots of laughing because they have their dad's ingenious sense of humor.  My children have become my dearest friends and they've turned out to be really great people.

    I'm so excited to share Once There Was a Mom with you! This witty little book by Emily Watts is an absolute joy! It captures my feelings of motherhood perfectly!  Wendy lightheartedly pokes fun at the impossible bar we set as mothers for ourselves and for our children and brings to light the power in those seemingly insignificant, little tasks that take up so much of mothering children. I was actually in tears when I finished reading and I couldn't wait to share this book with you. 

    The fun, contemporary illustrations by Destin Cox add charm and interest to this darling story. I am buying a copy of this book for my daughters as a Mother's Day gift.  I know they will love it too!

    Chicken Chile Tacos.

    Well, dinner was a HUGE hit tonight!
    I came up with this simple taco recipe because I wanted to make something easy, healthy and delicious. 
    About 80% of what I cook is done in a crock pot!  I love the convenience of it and I love food cooked slow and low!  Tender and hearty!

    This isn't even so much a recipe as it is an idea. 

    1. Cook your meat of choice in your sauce of choice in the slow cooker on low for 4-6 hours. 

    2. Remove chicken from pot and shred. 

    3. Return chicken to pot and add taco seasoning. 

    4. Cook an additional 30 min or so. 

    Serve in your favorite shell and top with your favorite taco toppings. ---yummy!
    Easy as pie!--actually, easier than pie. Way, way easier than pie!  :)
